Ingredients
1 (3 pound) broiler-fryer
Butter or margarine
Salt and pepper
1 cup plus 1 tablespoon fresh mint, divided
Directions
Rub outside of chicken lightly with butter. Sprinkle chicken inside and out with salt and pepper. Place 1 cup fresh mint in cavity of chicken.
Place chicken, breast side up, on a rack in a shallow baking pan. Bake at 375 degrees F., for 1 hours and 15 minutes or until done. Sprinkle 1 tablespoon mint over chicken during last 10 minutes of baking.
