Japanese Style Chicken Breast II

Ingredients

2 boneless skinless chicken breast
3 tablespoons soy sauce
1 teaspoon grated ginger root
1/4 cup sake or dry sherry
2 tablespoons peanut oil
2 tablespoons cornstarch

Directions

Mix together the soy sauce, ginger and sake and pour over chicken. Let stand for 45 minutes; turn the chicken over three or four times so that it is evenly coated and flavored.
Heat the peanut oil in a skillet; dip the chicken in the cornstarch and fry in the oil until it is an even golden brown.
Add a tablespoon of water, cover and cook over low heat until done. About 10 minutes.
