Japanese Style Chicken Breast

Ingredients

2 boneless breasts cut in half lengthwise
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon white pepper
1/2 cup pancake mix
1 egg, beaten
1 cup cold water
1/2 cup peanut oil
1 large lemon, cut into lengthwise wedges

Directions

Dust the four pieces of meat with the flour, salt and pepper. Set aside on waxed paper for a few minutes.
Put the pancake mix in a bowl; alternately add the egg and cold water. Beat with a whisk until there are no lumps in the batter.
Dip each piece of floured chicken in the batter. Place the peanut oil in a skillet and using very low heat, saute the chicken until it is golden brown. Place the chicken on paper towels for a few seconds after removing from the oil.
Cut each chicken breast crosswise into 1 inch strips. Top each strip with a wedge of lemon.
